This variety is Mellow Star which is a Japanese Shishito pepper fabulous for cooking or salads. The fruits average 3 1/2-4″ long and are heavily wrinkled with thin walls. This mild (no heat) when green and slightly sweet when red. Large, upright plants produce good yields over an extended harvest period. This sweet pepper is popular in Japan where its thin walls make it particularly suitable for tempura. We frequently enjoy these accompanying many of our meals throughout the season, because they are delicious pan fried, and an extremely quick and easy side. Another option is to stuff them with goat cheese either this way or or this way. This versatile pepper is very good in stir fries or sautés. In Asia, the fruits are always cooked green but are a special treat when they are used red. Thinly sliced, the red fruits are excellent in salads and coleslaw.
