Occasionally we cut the tops off the beets if they aren’t pretty, so if you find beets with tops in your share, try these roasted beets with tops, it is simple yet tasty. This beet Tzatziki is great served with chickpeas.

Sold as a bunch weighing 1.5 pounds. Bunches normally contain three to five beets. Occasionally our beets are sold without the tops.
