This is from the front shoulder and has more fat marbled in the meat for added flavor requiring slower cooking. These are incredible for barbaque style dishes such as for roasts, pulled pork, smoking or stews. We love using these roasts for our version of Carolina Pulled Pork barbecue cooked in a slow cooker. When cooked low and slow, this cut has been used to win many BBQ cooking contests.
