ZUCCHINI SOUP WITH LIMA BEANS

small or 3 large zucchini
sliced or cubed (approx. 3 cups)

medium onions chopped
(approx 3 cups)
4
tablespoons olive oil
6
cups chicken or vegetable broth
1
cup 10 oz. frozen pkg. Baby
lima beans
1
cup frozen green peas
finely chopped
fresh parsley and basil
salt and
pepper to taste
sour cream (optional garnish)
In 4 quart
sauce pan, sauté onions and zucchini in oil until limp. Add chicken or vegetable broth and chopped
parsley and basil and bring to a boil.
Add baby lima
beans and green peas and bring to a boil.
Reduce heat
and simmer 25-30 minutes until vegetables are soft.
Add salt and
pepper to taste.
Puree’ in
blender. Reheat as necessary before
serving. Can be strained through a
sieve for a smoother soup. Garnish
w/sour cream. Freezes well. Serves 6-8.
