Turnip Kohlrabi Salad

 

-          1 bunch turnips

-          1 kohlrabi

-          1 bunch radishes

-1/4 cup finely chopped parsley

- 4 tablespoons olive oil

- 2 tablespoons red wine vinegar

- 1 tablespoon honey

- Salt and Pepper to taste

1.      Peel and shred kohlrabi

2.      Shred turnips and radishes

3.      Add fresh ground pepper to taste and 1/2 teaspoon salt to vegetables and mix thoroughly.  Let stand 10 minutes.

4.      Mix olive oil, red wine vinegar and honey. Stir to coat the shredded vegetables.  Add parsley.  Serve chilled.  You might consider serving this salad over lettuce!
