Raw/Vegan/Gluten free/Nut free Zucchini noodles with Creamy tomato

FOR
THE PASTA: Peel outside skin of zucchini,
then with a carrot peeler, peel rest of zucchini down to the seeds,
creating long, flat noodles. FOR
SAUCE THE SAUCE: In a food processor add one can of
cannellini beans (white beans), one medium sized tomato, 2 cloves garlic,
juice of one small lemon, handful of basil, salt/pepper, and (if needed) a
splash of olive oil to thin. This
makes enough sauce for 2/3 servings of zucchini noodles and one medium
zucchini makes enough noodles for about 1 serving depending on preference.
