Roasted Red Pepper Mayonnaise. This recipe is provided from Kenny and Trace at the
North Asheville Tailgate Market. They
would make their version with simply mayonnaise and roasted peppers. I found this from Emeril
Lagasse. |

- ½ cup diced,
roasted red pepper. Preferably the
Italian Roasting Pepper,
Try this way of roasting your pepper. Here is another method
for roasting peppers. |
- 3/4 cup prepared mayonnaise - 1
tablespoon minced garlic - salt to taste - 1/8 teaspoon
cayenne pepper |

Combine
the red pepper, mayonnaise, garlic, salt to taste and cayenne pepper in the
bowl of a food processor, and process for 30 seconds. Scrape down the sides
of the bowl with a rubber spatula and process for 30 seconds longer. Serve
immediately or store in an airtight container in the refrigerator for up to 1
week. |
