Napa Cabbage/Tatsoi Coleslaw: INGREDIENTS:. 3 cups finely shredded napa cabbage or tatsoi, 1 cup finely shredded bok choi, 2-3 tablespoons very thin sweet red pepper strips, 1/4 cup seasoned rice vinegar or white vinegar, 1 tablespoon toasted sesame oil, 1/2 cup red onions – thinly sliced crescents, 1 teaspoon honey (optional)  DIRECTIONS:  (1) In large mixing bowl combine cabbage, bok choi, red sweet pepper strips and onion (2) In small mixing bowl stir together seasoned rice vinegar or white vinegar, sesame oil and honey if using.  (3)  Toss with the cabbage mixture.
