Kale with Blue Cheese Gratin  (1) Saute 3 bunches of Kale with an onion and garlic and set to the side (2) Make roux:  heat 4 tablespoons oil/butter and 4 tablespoons flour,   whisk in 1 cup of milk and 1 cup broth.   Add 1/4 to 1/2 cup blue cheese.  Melt into sauce. (3) Put sautéed kale/onion in a casserole dish.  Pour sauce on top. (4) Mix 1/2 cup of bread crumbs with a drizzle of olive oil.  Top casserole with breadcrumbs.  (5) Bake gratin at 350 for 10 minutes
