Roasted Edamame INGREDIENTS:
1 tablespoon extra-virgin olive oil, 1/2 teaspoon wasabi
powder - or more, 2 teaspoon fresh basil - chopped (I use a lot more), 1/2
teaspoon salt, 1/2 teaspoon freshly ground black pepper, 1/4 teaspoon fresh
ginger – minced, 2 cups edamame DIRECTIONS: (1) Boil beans about 4 minutes -until tender
– cool then shell. (2) Preheat oven to 375° F. and Lightly coat a large baking
sheet with olive oil cooking spray (3) In a large bowl, whisk together the oil,
wasabi, basil, salt, pepper, ginger and edamame and toss well to coat. (4) Place contents onto the prepared baking
sheet and bake for 13 minutes until golden brown. Place on a rack to cool. This
is a wonderful snack.
