Broccoli Cheddar Cheese Soup |

2 heads broccoli –
chopped -
½ lb onions - chopped -
½ lb potatoes –
washed and chopped -
3 cups vegetable
broth -
4 oz cheddar cheese -
shredded -
3 cloves garlic –
minced |

3 Tbs butter -
3 Tbs olive oil -
1 tsp sea salt -
1 tsp black pepper -
¼ cup heavy cream -
1 cup milk |
1. Melt butter and olive
oil over medium heat. Saute the
onions, garlic and potatoes for 5 minutes.
Peel the stems of broccoli and then chop the stem and the florets of
broccoli. Cook with the onions and
potatoes for 10 minutes until soft. 2. Add broth, salt and
pepper and bring to a boil. Cook
covered for 30 minutes. Reduce to a
simmer and puree with an immersion blender or carefully blend in a food
processor or blender in small batches. 3. Add the cheddar cheese
and stir until melted. Add the milk
and cream just before serving. Makes 6
