Red Rusian Kale Slaw (CSA member and chef
Sylvia Everett created this delicious recipe.
Sylvia said the salad has a lovely fresh taste and the rich colors make
for a beautiful dish with a consistency halfway between a salad and slaw.)
Slaw: 1 bunch red Russian kale, - sliced into 1/4 “
strips, 1 red, yellow or orange sweet pepper – cut into thin strips or sliced,
1/2 Candy Yellow onion – chopped, 1 diced jalapeno, 1/4 cup sunflower seeds. Dressing:
1/3 cup olive
oil, 2 tablespoons red wine vinegar, 1 tablespoon sugar, salt and pepper to
taste.
