Napa Slaw Salad

 

SALAD:

            1 head Napa Cabbage

            1/2 c. olive oil

            12 oz thin spaghetti or udon noodles

2 Tablespoons sesame seeds

            1/2 c sliced almonds

            1/4 c chopped scallions/bunching onions

           

 

DRESSING:

            1/2 c sugar

            1/4  c. rice vinegar

            1/2 c. olive oil

            1 clove garlic

            2 Tablespoons Soy Sauce

 

  1. Chop Napa cabbage very thin and place into a large serving bowl
  2. Heat oil.  Add almonds, sesame seeds, scallions, noodles and seasoning.   Brown slightly.  Remove from heat and drain well on paper towels.  Add sauce to Napa Cabbage.
  3. Combine all dressing ingredients; mix well and pour over Napa Cabbage & mix well.
