Kale Salad with an Attidude (Submitted by CSA Member Gwen Clemens)
  • 1 large buch of kale (leaves torn into bite-sized pieces.)
  • 1/4 cup Grape Seed Oil
  • Salt and Freshly Ground Pepper
  • 1/2 cup Candy Onion (thinly sliced)
  • 2 tablespoons white wine vinegar
  • 1 tablespoon white miso
  • 1 teaspoon granulated sugar
  • 1 Mango (diced)
  • 1 Avacodo (diced)
  • Olive Oil

(1) Marinate Onions:  Combine the sliced onions, white wine vinegar in the base of a food processor.  Let Marinate for 5 minutes. 

 

(2) Prepare Salad: Add kale into a large mixing bowl and season with salt and pepper.  Drizzle olive oil.  Massage the kale with your hands, making sure to coat the kale with oil, and begin to break down the cell structure of the kale.  Tossin the diced mangos and avocados. 

(3) Make the Salad Dressing:  Add the miso and sugar to the onions.  Pulse for a few seconds.  With the food processor going, slowy drizzle in the grape seed oil.

(4) Assemble Salad: Toss salad with the dressing and serve.
