Szechuan Green Beans

1 pound green beans, cleaned

2 tablespoons olive oil
1 tablespoon minced fresh ginger
1 tablespoon minced garlic
2 tablespoons soy sauce or tamari

1 ounce hot chili garlic sauce or fresh chili peppers
2 tablespoons cup rice wine vinegar
1/2 teaspoon sesame oil  
3 scallions – white and green parts sliced thin 

(1)   In saute pan over high heat, sauté the beans in olive oil until bright green. (About 10 minutes for regular green beans).   Remove beans from heat.    

(2)   Make the sauce by reduce heat to medium-low and add oil as necessary and sauté the ginger and garlic for 2 or 3 minutes.  Quickly add soy sauce, chili sauce, rice wine vinegar, sesame and cook for a couple minutes.

(3)     Add beans back into skillet with sauce and toss with sauce.  As soon as the beans are coated with the sauce, garnish with scallions.
