Bok Choy Salad

 (Submitted by CSA member Lorraine Conard. She used baby bok choy but we think the large bok choy would work well.)

SALAD

- 6 cups of very thinly sliced bok choy

- 1 large granny smith apple – thinly sliced or  julienned

- 1 large carrot – shredded or julienned

- 1/2 cup red onion - slivered

 

DRESSING (Mix Together to taste.

-          1/3 cup mayonnaise with olive oil

-          1/3 cup Chobani plain yogurt

-          1/2 teaspoon sugar or honey

-          2 tablespoons white wine vinegar

(1)   Prepare Salad ingredients

(2)   Mix Dressing

(3)   Toss salad with dressing
